KUALA LUMPUR, April 3 — Local food content creator, Khairulaming has taken to his Instagram to address his excessive oil usage for his cooking following complaints online.
This was after Khairulaming was called out by local health expert, Dr Rafidah Abdullah on Twitter following his ‘sambal hijau bilis and omelette’ video, which Dr Rafidah deemed too oily and unhealthy.
Following his sambal video, Khairulaming via a new video yesterday, admitted that he has been getting feedback from his followers with some supporting his way of cooking while others think it’s unhealthy.
Some also think he should substitute his ingredients with something healthier.
However, Khairulaming defended the way the sambal was made by stating that the extra oil was actually needed in order to preserve the original taste of the dish.
Aside from creating food content, Khairulaming, or his real name Khairul Amin Kamarulzaman, is also an entrepreneur who’s known for his hot-selling Sambal Nyet.
In conjunction with the holy month of Ramadan, he is doing his annual 30 Hari 30 Resepi (30 days, 30 recipes) videos for the whole month.
Khairulaming, in the video, added that this was also the case with other dishes such as fried chicken and macaroni and cheese.
“If you want a delicious sambal, you need to fry it in deep oil so you can get the ‘pecah minyak’ (oil splitting) effect. If you want a juicy and crispy fried chicken, you need to deep fry it.
“And if you want a creamy mac and cheese, you need to cook it with a lot of cheese. That’s the way it is and that is the way the food is prepared.
“But you can still adjust (the ingredients). However it will not taste as good as the original. That’s all,” he said.
Khairulaming also said that viewers are not compelled to follow his instructions and they could substitute or minimise the ingredients to their own liking.
“The reason why I’ve chosen to show how many spoons of sugar, oil and all is because I want to show the reality of it.
“Actually this is how most local food stalls prepare the dish. It’s just us who might have missed it or are not aware because we never prepare the dish ourselves.
“And now that I’ve shared the video, at least some of you guys are aware of the actual ingredients of the dishes,” he said.
Khairulaming also pointed out that it was also important to control food intake and to eat moderately.

Previously, Dr Rafidah, a nephrologist, took to Twitter to call out Khairulaming’s sambal video where she stated that the amount of oil use was unhealthy while also asking him to be more aware of Malaysian health issues.
However, she has since apologised for her tweet after some social media users said she was accusing Khairulaming of ruining the health of Malaysians with his videos.
Khairulaming’s explanation video has since garnered over one million views and over 250,000 likes with comments from his followers supporting his explanation.
